Classic Sunnyside Up Eggs

My dad taught me how to make these awesome sunnyside up eggs many years ago, and I have to say they have shined gloriously on my breakfast plate many times since then.

To make these eggs, all you will need is…

Some eggs

Rye or White Bread

A Pan

Butter

Sunflower Oil

Recipe

First, you have to oil your pan with the sunflower oil generously. Then let the oil heat up on a low setting until small ripples start forming. Cut up your bread into cubes about one inch thick and drop them into your pan. Now you fry them, flipping continuously until you see a golden crispy edge forming on at least two sides of the bread. It fries rather quickly so take care not to burn them by flipping each piece individually since they tend to slide around a lot in one big mass.

Next, you will take the bread off onto your clean breakfast plate and put some butter in the pan. Now you fry the eggs, breaking them carefully not to damage the yolks. There will be a small amount of egg white still on top of each yolk that you can use a butter knife to very carefully trace a circle around the yolk and thoroughly fry all the whites.

This process you will have to do quickly since the eggs will be done in approximately 2-3 minutes from when you put them in the pan. The yolks should still be fully intact and half runny.

Plate the eggs next to your croutons and sprinkle with coarse salt. You can enjoy these eggs plain or with additional things like avocado, tomatoes or fresh greens. I find that the best addition to them is just a big cup of hot black tea.
